Tori Ageni (Simmered chicken & eggplant with sweet soy sauce)
Here's a healthy Japanese-inspired dish your family is going to enjoy!
Ingredients:
(For 2 servings)
160 grams Chicken leg
25 grams Leeks
25 grams Fresh ginger
8 grams Salt
5 grams Black pepper
20 milliliters soy sauce
20 milliliters Mirin Japanese cooking wine
20 milliliters sake wine
200 milliliters Dashi soup stock
60 grams Asparagus
30 grams Red bell pepper
40 grams Corn starch
400 milliliters soy oil (For deep fry)
Method:
1) Cut chicken and egg plant to bite size portions; season chicken with salt and pepper.
2) Combine 200 milliliters dashi stock, mirin, dashi, sake and soy sauce heat in a pot
3) Heat soya oil to 170 C Drench seasoned chicken in corn starch and deep fry together with eggplant.
4) After frying chicken and eggplant, transfer to sweet soy broth and boil for another 5 minutes.
5) Plate and garnish.
