Pureed Carrot Soup
Looking for something light and healthy for lunch? Then this recipe is for you. It's perfect times when you just want something that is both light and nourishing to eat!
Ingredients:
1 tablespoon butter
1 tablespoon olive oil
1 onion chopped
750g carrots diced
Aji ginisa All-Purpose Seasoning Mix
1 teaspoon sugar
1.5 liters chicken stock
1/2 cup short grain rice rice
Freshly cracked black pepper
2 tablespoons fresh herbs (chives/parsley /spring onions)
Sour cream
Procedure:
1. Heat the butter and oil. Add onion and carrots to the oil and butter then season with Aji Ginisa, the only All-purpose Seasoning Mix that gives the true “Gisa" taste of garlic, onion and meat. Plus, it saves on cost and hassle of chopping garlic and onion.
2. Add pepper and cook until tender. Cook this mixture covered stirring often about 10 minutes. 3. Then add rice, stock( chicken, vegtable or water) and sugar bring to boil reduce heat to simmer cover and cook about 30 minutes until carrots are tender.
4. Blend and then return to pot adding addtional seasoning as needed. Herbs chervil, mint, chives or parsley can be used as a garnish with a tablespoon of sour cream. For the herbs 1 teaspoon dried or 1/4 teaspoon powdered = 1 tablespoon fresh.
