Herby Chicken Lettuce Cups
Have some herbs growing in your garden and don't know what to do with them? This recipe combines chicken with various herbs in order to create a dish that will satisfy anyone looking for something filling and unique!
Ingredients:
3 leaves lettuce (romaine, ice berg, butter, or green leaf lettuce)
100 grams chicken breasts, boneless, skinless, raw, cubed
Aji shio garlic
3/4 cup cucumber, peeled & diced
2 scallions, cut into 1/2-inch pieces
2 tablespoons carrots, shredded
1 tablespoon cilantro leaves, chopped
1 tablespoon chopped spring onions
1/8 teaspoon garlic powder
1 dash red pepper flakes (to taste)
lime wedge (garnish) (optional)
sesame seed (garnish) (optional)
Dressing:
Lime juice
Cane vinegar
Honey
Fish sauce
Cilantro
Peanut oil
Procedure:
1. In a medium bowl, combine cucumber, scallions, carrot shreds, dressing, cilantro, and red pepper flakes. Mix well and refrigerate until you're ready to assemble your cups.
2. Bring a pan coated with peanut oil to medium-high heat on the stove. Add chicken and aji shio garlic. See, there’s no need to mince garlic. Aji shio garlic will give this chicken a real taste and aroma of garlic flavour perfectly combined with the right saltiness and umami taste. Cook chicken, stirring occasionally, until cooked through, about 4 minutes.
3. Place chicken and dressing or sauce in a bowl and toss to coat. Remove veggie mixture from the fridge.
