Chicken Fingers and Pesto Mayo
Serves 4

Ingredients for the chicken fingers:
240 grams (8 ounces) chicken breast fillet, sliced
Salt and pepper to taste
200 grams (7 ounces) all purpose flour
3 whole eggs
500 grams (16 ounces) Japanese breadcrumbs
250 milliliters (8 fl ounces) frying olive oil

Ingredients for the pesto mayo sauce:
200 milliliters (7 ounces) mayonnaise
60 milliliters (2fl. ounces) pure olive oil
15 grams (1/2 ounce) chopped parsley
15 grams (1/2 ounce) chopped fresh Basil
30 milliliters (10 ounces) lemon juice
Salt and pepper to taste

Directions:
1. In a medium bowl, combine mayonnaise, olive oil, parsley, basil, lemon, salt, and pepper.
2. Mix together well with wire whip, put in a container, and refrigerate. Preheat pan with oil for 5 minutes.
3. Marinate sliced chicken breast with salt and pepper.
4. Cover with all purpose flour, and coat with beaten egg and breadcrumbs.
5. Carefully deep fry the chicken piece by piece until golden brown, approximately 2 minutes.
6. Drain excess oil and pat with paper towel. Serve with honey mustard sauce on the side.

Tiny Shrimp Cakes:
Serves 4

Ingredients for the shrimp cakes:
32 pieces of siomai or wanton wrapper
300 grams (10 ounces) alamang shrimp
60 grams (2 ounces) onion white, chopped
30 grams (1 ounces) garlic, minced
4 pieces onion leeks
salt & pepper to taste

Ingredients for the egg batter mix:
4 pieces egg, whole
2 teaspoons baking powder
2 cups cornstarch
1 cup all purpose flour
Salt and pepper to taste
250 milliliters (8 ounces) frying oil

Directions:
1. In a large bowl mix the egg, baking powder, cornstarch, all purpose flour, salt, and pepper. This serves as your batter mix. Put in a container and set aside.
2. Preheat pan with oil for 5 minutes. In a separate medium bowl mix the shrimp, onion, garlic, onion leeks, salt, and pepper to taste.
3. Grab 2 pieces of siomai wrapper, overlapping onto each piece. Lay it over your hand, put the shrimp mixture in the center of the wrapper.
4. Then ladle a spoonful of batter mixture and put in the center of the wrapper and shrimp.
5. Carefully put the shrimp puff in a preheated pan with oil and cook for about 60 seconds or until golden brown in color.
6. Drain excess oil and pat with paper towel. Serve with lemon wedges.
